Iced Tea |
| Tea is
refreshing at any time of year, but iced tea is delicious on a hot summers day.
Any tea can be used for making iced tea but below are some of our

| Iced teas were invented at the Louis World Trade Fair in 1904 and rapidly grew in popularity throughout the whole of the US. Suprisingly this trend has never caught on in the UK. To brew iced tea use double the amount of tea normally used. Ceylon teas and Keemun tea are generally a good choice, but many other varieties can be used.

| Classic Iced Tea Place 6 - 8 large teaspoons of loose tea into a cup and add freshly boiled water. Add two teaspoons of sugar (or to taste) and stir well. Leave this to brew for 5-10 minutes and then allow it to cool. Half fill a 1 litre jug with ice and add cold water until the jug is 3/4 full. After the brewed tea has cooled, pour over the iced water, using a strainer to catch the leaves. Add a squeeze of lemon and serve in individual glasses. Garnish with fresh mint sprigs and lemon wedges. Why not experiment? Try using orange, lime or lemon juices, mint, honey or even freeze strawberries to add to your drink.

| Iced English Breakfast Tea
In a 1 Litre teapot make strong tea (6-8 teaspoons). Add two teaspoons of sugar and a small amount of mint, about six sprigs to the tea. Allow this to infuse for around 15 minutes and then remove the tea leaves and mint. Allow the tea to cool and when it is quite cold, add 250ml of freshly squeezed orange juice and half the juice of a lime. Stir well. Pour this mixture in to a jug with ice. Add fresh mint and serve in individual glasses. Garnish the glass with orange slices. |
| Iced Mint Tea Place 4 - 6 teaspoons of Mint tea into a tea pot. Add 2 cups of boiling water and allow to steep for 6 minutes. Remove the tea leaves. Stir in 3 tablespoons of honey, 2 table spoons of lemon juice and 2 cups of cold water and allow to cool. Place ice cubes and lemon slices into a jug and pour in the tea mixture. |
| Iced Chai Tea In a pan boil 2 litres of water and add 4 - 8 spoons of Darjeeling Tea. Add 4 thin slices of ginger, 1 vanilla pod cut into 1 inch pieces, 1 cinnamon stick, and 2 bay leaves. Simmer gently for 5 minutes. Add 1 cup of milk. Stir in 6 tablespoons of honey. Remove from heat and allow to steep for 3 minutes. Strain the tea into a jug, removing the tea leaves and spices. Chill and serve over ice. |
| Sun Tea Fill a 1 litre jug with cold water. Add 5 - 8 teaspoons of any black loose leaf tea and stir. Leave in sunlight for 1 - 3 hours depending on taste. Strain into a clean jug and chill. Add sugar and lemon to taste and serve with ice.

| Apple Iced Tea Place 4 - 6 teaspoons of any black loose leaf tea in a teapot. Add 1 litre of boiling water, allow this to steep for 5-10 minutes. Remove the tea leaves. Add 500ml of apple juice and one tablespoon of lemon juice. Add sugar to taste. Chill.

| Honey Strawberry Iced Tea Remove the leaves and rinse 500g of strawberries and place in a blender with 3 tablespoons of honey. Process this to produce a smooth mixture. Add 150ml of Orange juice concentrate and blend well. Prepare 500ml of any loose leaf green tea. After infusion remove the tea leaves and allow to cool. Pour the blended mixture into the cooled tea and serve over ice.

| Peach Iced Tea Place 5 - 8 teaspoons of green or black loose leaf tea into a tea pot. Add 1 litre of boiling water and allow to steep for 5 minutes. Remove the tea leaves. Pour the tea into a jug and add 400ml of peach juice. Stir in a sliced and finely chopped peach. Refrigerate until chilled - around 3 hours. Add ice cubes and garnish glasses with a slice of peach and mint sprigs.
