Pai Mu Tan

 
The name means 'white peony', and relates to the delicate flower petal appearance of this tea. The leaves are naturally dried in the sun to give a fresh, silky taste. The colour is clear and pale and the aroma is delicate and sweet. One of the most exquisite cups of tea you will ever taste. Ideal for taking after meals as a health digestif or a light afternoon tea.
 
Brewing suggestions

Use one to two teaspoon of Pai Mu Tan per cup. Heat the water until it is steaming but not boiling (90°C). Infuse the leaves for approximately 2 - 3 minutes. The leaves are suitable for multiple infusions, at the same sitting. The tea's delicate flavour is best enjoyed without milk or sugar.
