White tea is different from other types of teas, because it is made from
new growth buds and young leaves. The buds have not fully opened and are picked
when still covered by a fine silvery white down, like the hair on a peach. It is the rarest type of tea and produced on a limited scale. It undergoes little processing and no fermentation. White tea also has health benefits. It is lower in caffeine than green and black tea. Very little processing leads to the tea being high in antioxidants (higher than green tea), which protect the body by mopping up damaging free radicals. White teas should be brewed in water below boiling point (90°C) which gives a delicate light and sweet taste. |
